Curried Sweet Potato and Squash Soup

Winter is coming to an end in the Midwest but there’s still time for a couple more pots of soup. Simple, hearty, delicious. You can do a solo squash or sweet potato version.
1 acorn squash
2 lg sweet potatoes
1 lg onion
5-6 cloves garlic
1.5 inch hunk of ginger
2-3 c veggie broth
2-3 c milk
Pickled jalapenos – handful
1 T cumin
1 t curry powder
2 T chili powder
Pinch of cayenne
Squirt of tomato paste
Splash of white wine
Bake squash & boil sweet potatoes. Saute onions in stock pot, add garlic, ginger, spices, japs. Add wine and tomato paste to prevent it from sticking. Puree sp’s & squash w/ broth & milk. Add water to reduce thickness as needed. Sprinkle with cilantro if you have it on hand.
